辣椒干蒸鱼头 Steamed fish head with dried chillies


                  
食材:

鱼头  1/2 pc   fish head  
油      1 tbsp   oil 1 tbsp
蒜茸  1 tbsp   chopped garlic     
姜丝  1 tbsp   shredded ginger
辣椒干 8 pcs dried chillies
        
芫荽少许   coriander leaves     little
葱    少许   spring onion           little   


调味料:

蚝油 1 tbsp     oyster sauce
生抽 2 tbsp     light sauce 
白糖 1/2 tbsp  suger    
花雕酒 1 tbsp hua diao wine
清水150ml     water  
 



步骤   Method:

(1)     将半边鱼头斩块放在碟子上。Cut fish head into pieces and place onto a plate.


(2)烧热油, 爆香蒜茸, 将辣椒干和姜丝炒香。Heat up oil and chopped garlic. Add in dried chillies, shredded ginger and stir-fry until fragrant.


(3) 加入调味料,小火煮两分钟,盛起待凉. Add seasoning and cook over low heat for 2 mins. Dish up and leave aside to cool。


(4)将煮好的调味料淋在鱼块上。Pour the sauce over the fish head.



(5) 大火蒸15分钟后取出, 洒上葱与芫荽, 即可上桌。Steam with high heat for 15 mins. Remove from steamer, sprinkle chopped spring onion and coriander leaves.
