罗马式烤鸡Roman Style Roasted Chicken
材料 Ingredients:
鸡 1 whole chicken
熟马铃薯(切块) 4 cooked potatoes(cut into pcs)
熟胡罗卜(切块) 1 cooked carrot(cut into pcs)
盐 1 1/2 tbsp salt
红椒粉 1 tbsp paprika
豆蔻粉 1/2 tsp nutmeg
白胡椒粉 1 tsp white pepper powder
百里香粉 1 tsp thyme powder
蒜粉 1/2 tsp garlic powder
橄榄油 1 tbsp olive oil
红酒 2 tbsp red wine
步骤 steps:
(1) 将盐、豆蔻粉、红椒粉(半)、白胡椒粉、百里香粉及蒜粉混合搅匀.
Mix salt, nutmeg, paprika(half), white pepper powder, thyme and garlic powder together.
(2) 将调味料涂遍鸡身正背两面, 然后等2-3小时,使之入味.
Rub the mixture evenly onto the chicken front and back, and wait for 2-3 hrs.
(3) 放入预热至150°C的烤箱中,烤约50分钟后,取出。
Roast the chicken in a preheated oven at 150°C for 50 mins and remove from oven.
(4) 将橄榄油、红酒、红椒粉(另半)混匀,然后刷在鸡身表面.
Mix olive oil, red wine and paprika(another half). Brush the mixture generously onto the chicken.
(5) 将事先煮好的马铃薯、胡罗卜装饰在旁. 置入烤箱烤约10分钟。
Garnish along the chicken with potatoes, carrots, bake for another 10 mins.

叻沙派司 Laksa Pie
数量 quantities: 6 pcs
食材 Ingredients:
奶油(少许) butter (little)
大洋葱 1 x big onion
叻沙酱料 1 x pkt laksa paste
叻沙叶(少许) laksa leaves (little)
罗卜 1 x carrot
马铃薯 2 x potatoes
鸡丁 100g x chicken
鲜虾 200g x prawn
牛奶 1 cup x milk
冰冻酥皮 4 pcs x frozen puff pastries
鸡蛋 1 x egg
鹌鹑蛋 6 x quail eggs
步骤 Steps:
(1) 加少许奶油,将叻沙酱炒香。Add butter and fry laksa paste until fragrant.
(2) 加入洋葱,叻沙叶,然后炒至金黄色。Add onion, laksa leaves, fry till golden.
(3) 加入罗卜及马铃薯, 再加清水,炒至10分钟,确保罗卜与马铃薯炒熟。Add carrots,potatoes and water. Cook for about 10 mins till carrots and potatoes are done.
(4) 加入鸡丁,牛奶,搅拌约3分钟,再加入薯粉。Add chicken cubes, milk. Stir for about 3 mins and pour in potato starch to thicken.
(5) 最后加入虾,炒香后熄火。Add prawn at last and turn off the heat.
(6) 取出冰冻酥皮,置入铝制容器中,并将多余的酥皮切掉。Take a piece of ready-made frozen puff pastry and fit into a pie container.
(7) 填入馅料,然后再盖上另一片酥皮。Add fillings and cover with another pcs of pastry.
(8) 中间开孔, 并以蛋黄酱涂抹表层。Cut a small hole at the centre and brush the surface with beaten egg.
(9) 先将烤箱加热至180°C,然后烘烤30分钟或派司呈金黄色。Bake in preheated oven 180°C for 30 mins or until pies are golden.

红豆樱饼 Red Bean Rice Cake
材料 Ingredients
糯米 250g glutinous rice
樱红色素 少许 Cherry red colouring little
红豆沙 适量 red bean paste as needed
盐 3g Salt
白糖 120g Suger
步骤 Steps
糯米洗净, 泡水12小时沥干,加入少许红色素和盐,染成淡粉红色。
Polished glutinous rice is soaked overnight or at least 12 hours.
Add cherry red colouring and salt.
Stir until light pink.
取1/3的米磨碎, 加入2/3米中, 然后蒸熟。
Take 1/3 rice to grind, add in another 2/3 rice, and steam it.
蒸好的糯米加糖, 拌匀, 待凉30分钟。
Add suger to steamed rice, and wait for 30 mins.
米团中间放红豆馅,再捏成饼状,添上草莓作点缀.
Stuffed with red bean paste and mold rice in cake shape.
Decorate with strawberries and ready to serve.

乳酪通粉烤蛋饼 Macaroni and Cheese Frittata
食材
通心粉 200g macaroni
切达干酪 200g cheddar cheese grated
牛乳 200ml milk
鸡蛋 2 eggs
奶油 2 tsp butter
洋葱 2 onions
萝卜 1 carrot
青笼椒 1 greem chillies
大红椒 1 red capsicum
蘑菇 1/2 can of mushroom
白盐 1/2 tsp salt
加莱姆马萨拉咖哩香料(非必要) 1/2 tsp garam malasa(optional)
步骤 Steps:
(1) 先将通心粉用烧水烫熟.Cook macaroni in 2 litres of boiled water.
(2) 加热奶油, 炒葱片至金黄色. Heat butter and fry onions till golden.
(3) 加上蘑菇、萝卜、青笼椒、大红椒, 搅匀炒至变软. Add mushroom, carrot, green chillies and
red capsicum and stir well.
(4) 加上通粉、盐及加莱姆马萨拉咖哩香料(非必要). Add macaroni, salts and garam masala (optional).
(5) 加上牛乳、鸡蛋和乳酪。Add milk, eggs and cheese.
(6) 烤箱预先加热(180°C),然后将食物置入烤25分钟.Preheat oven to 180°C and bake for 25 mins.
(7) 撒上切达乳酪, 准备上桌.topped with Cheddar cheese and ready to serve.
